what is a blondie? well, that answer could really be very different depending on who you ask, but for the purposes of this post, we're talking about brownies that use white chocolate. that's also the biggest difference - brownies are BROWN, while blondies are WHITE! :)
i LOVE baking. but more than the actual item i produce, it's about the exact measurements that will inevitably lead to a great product. did you know i rarely eat what i make? unless it's something i'm making for me - but if i bake for others, i rarely eat what i make.
one of my FAVORITE blogs to get baking recipes from is Baking Bites by Nicole. I love blog b/c she keeps the ingredient list short and simple, and every now and then she'll do a specialty item, but most of the time it's stuff I already have in my pantry.
here's the recipe for: White Chocolate Macadamia Nut Blondies or you can just see the ingredient list below.
White Chocolate Macadamia Nut Blondies
1/2 cup butter, melted and cooled
1 cup sugar
1/4 tsp salt
1 large egg
1 tsp vanilla extract
1 cup all purpose flour
2/3 cup toasted and salted macadamia nuts, coarsely chopped (350 for 10 minutes)
1/2 cup white chocolate chips
1/2 cup butter, melted and cooled
1 cup sugar
1/4 tsp salt
1 large egg
1 tsp vanilla extract
1 cup all purpose flour
2/3 cup toasted and salted macadamia nuts, coarsely chopped (350 for 10 minutes)
1/2 cup white chocolate chips
Preheat oven to 350F. Line an 8×8-inch baking pan with aluminum foil and lightly grease.
In a large bowl, whisk together butter and sugar until well-combined. Beat in salt, egg and vanilla extract until well combined.
Stir in flour and mix until no streaks of dry ingredients remain. Fold in macadamia nuts and white chocolate until they are evenly distributed.
Transfer dough to prepared baking dish and spread into an even layer.
Bake for about 30 minutes, until bars are set and light golden.
Cool completely in the pan before slicing.

adding in the white chocolate! the best part!
right before it gets cooked - YES, you DO see toasted macadamia nuts!
why didn't i do more pictures for the baking?! B/C IT'S A PAIN! i totally admire my friend, Annie, who takes step by step pictures of most of her baking adventures. There are other notable bloggers, like Pioneer Woman & even Bakerella, that do so as well, but they are world famous, so they probably have people who help them now. :)
how are these blondies an homage, you ask? b/c my previous blog on wordpress is named after my college nickname: funblonde. that site is more "personal" so if you're REALLY bored, go peep on over there. :)
